I have a busy restaurant that is adding a dedicated pizza station and I need detailed construction plans for a gas-fired oven that will live on the main cook line. The focus is purely on the engineering and build documentation—recipe work and marketing are already handled in-house.
Complete architectural and mechanical drawings (CAD or similar) ready for submission to my local inspector
Burner and gas line specifications that meet commercial safety codes (North American standards)
Recommended refractory and insulation materials with thicknesses and sourcing notes
Venting layout, clearance requirements, and airflow calculations compatible with an existing Type I hood

Here’s what the finished package should cover:
• Complete architectural and mechanical drawings (CAD or similar) ready for submission to my local inspector
• Burner and gas line specifications that meet commercial safety codes (North American standards)
• Recommended refractory and insulation materials with thicknesses and sourcing notes
• Venting layout, clearance requirements, and airflow calculations compatible with an existing Type I hood
• A concise assembly sequence that my stainless-steel fabricator and mason can follow without guesswork
I can supply current kitchen measurements, hood drawings, and photos of the install area. Plans should be delivered as PDF plus original editable files (DWG, SKP, or comparable). If you have built or documented commercial pizza ovens before, please mention applicable code sections you’ve worked with—e.g., NFPA 96, ANSI Z83.11.
Once the design is approved, I may commission you for on-call clarification during the build, so clarity and accuracy in the documents is essential.
